Hello folks,
I posted several threads asking for advice for preparing chicken for a church group at our home. This is what I did:
I bought three two packs of whole chickens at Costco Business for $129 a lb. I disassembled them, completely deboning the breasts, removing the tenders, taking the hip bone out of the things, and removed the whole wings.
The breasts & tenders I skinned and seasoned with Meat Church Holly Gospel, grilled half and glazed w/ Sweet Baby Rays, smoked the other half dry, spritzed w/ duck fat.
The thighs & seasoned w/ Winner Winner Chicken Dinner, smoked, spritzed w/ duck fat and dipped in Alabama white sauce.
The drums I seasoned w/ McCormick Nashville hot, smoked, spritzed w/ tabasco.
The winds I seasoned w/ How to BBQ right - Malcum Red's The BBQ rub and glazed w/ Sweet baby Rays.
The wings, bama white thighs, and the Nashville hot drums were big hits. The grilled breasts, I burnt the sauce. I rinsed off the burnt sauce ad will use for chicken salad. The smoked breasts were good.
I also roasted a big old pan of mixed veggies tossed in olive oil, balsamic, thyme, rosemary and sage. Glased afterwards with/ balsamic reduction. Huge hit.
Unfortunately, the crew of 15 stormed the kitchen as I was laying out food before I could get picks.
