    Ideas for smoked turkey slider appetizers?

    Hello friends,

    We are hosting a holiday open house. Folks are asked to bring appetizers. I want to use my smoked herb butter turkey breast to make sliders. I am thinking of Capriotti's "Hot Bobby" sandwhich and WaWa's Gobbler. I want to use King's Hawaiian sweet slider rolls. I think adding stuffing to such a small sandwich might be too much bread. I was thinking smoked buttery turkey sliced thin, sweet and tangy cranberry sauce, and cream cheese, and warmed in the oven. I think the sweet creaminess would add an interesting contrast the texture of the turkey and the tartness of the cranberries. I kind of feel like the tangy cranberries and sweet creamy cream cheese would hight the smokey turkey without overshadowing it.

    How do these sound?

    Any other ideas?

    I know you said you wanted to use King's, but how about making the rolls out of stuffing? I have not tried this, but maybe roll the stuffing into a sheet about ½" thick and cut them out with a biscuit cutter. Do this on a parchment lined cookie sheet. Then leave the biscuits in place and remove the remainder. I think baking them might firm this up enough. If this sounds good, do a test bake to make sure it works.

    Kings just has that slider shape and size. Stuffing is a classic flavor and would add depth. Maybe put some in a food processor and make it spreadable. If the stuffing was baked, get some of the carmelization. All the flavor, very small amount of bread and real-estate on your slider. 😋

      jjdbike Sounds great! Funny, I just did an appetizer last night with puff pastry (pepperidge farm). You bake off the shells, scoop out the middle, fill, garnish. I failed to get any pics last night, but I think you get the idea. They also come in a cup size for a two-bite portion.

      I would put a little schmear of cream cheese (fashion a pastry bag with a zip loc and snip the corner), layer up the turkey, top with a bit of cranberry. A sprig of rosemary for a festive garnish🎄
      Yeah, I still have fancy presentation on the brain….

      if you use the slider rolls, be sure to secure with a toothpick for stability. Use a frilly one for color 😉

        Yes, one tastes food with our eyes first.
        I’m wondering if I could use a sprig of rosemary in stead of a fluffy toothpick. They would look like mini Christmas trees 😀

      This is an adventure that would be hard to mess up...my addition would be to use Whipped Cream Cheese with a bit of Poultry Seasoning mixed in and Cranberries for sure!

      I like what RonB Johnny Booth SheilaAnn have suggested… how about taking those King’s Hawaiian slider buns, and cutting about 3/4 of an inch out of them sideways, and making that into stuffing? Like, dry it out in the oven, then mix with onion, celery, broth, and herbs.

      The total bread stays the same. That stuff comes in a sheet, right? Then just work with it like a big sheet cake. Cut the middle out, make the stuffing, reassemble it like a big oreo: put the turkey/cranberry sauce/stuffing/etc in the middle, put the top back on, and cut it into the sliders.

        I’d say keep the stuffing and pan fry it to add some texture to the sliders.

        You can even make a giant stuffing ‘pancake’ in a griddle if you are keeping the package of sliders rolls uncut while building the sliders

          I love the idea of the toothpick to hold together and for decoration.
          I wonder if I could use a sprig of rosemary instead of a toothpick. It would look like a mini Christmas tree.

          We did some post Thanksgiving sandwiches with turkey, a layer of dressing and cranberry sauce. The dressing was made with chorizo so it had some kick.

            I’ve been thinking about it. I really want this to taste like a Christmas or Thanksgiving mini sandwich.
            The buttery, savory flavor worker the slightly caramelized texture it a crucial element.

            I’ll just be getting back from an overnight deep sea fishing trip so I’ll will be tired and not looking for a lot of work.

            I’ll simply use Stovetop Stuffing “Savory Herb”. Instead of water, I’ll use turkey stock and butter. I’ll get it a little crispy / toasty in the oven.

              I did a search and found this recipe.
              This is what I’m shooting for.

              All the best things about Thanksgiving in slider form! These turkey cranberry sliders are warm and buttery, made with Hawaiian rolls packed full of turkey, stuffing, and cranberry sauce for the perfect balance of sweet and savory. A must-make with holiday leftovers!

                  That sounds outstanding! I have two more smoked turkey breasts with a bbq flavor profile. Now I know what I’ll do with at least one of them.
