    Comprehensive spatchcocking

    Somewhere, 2+ years ago, I read about spatchcocking that removed the clavicle (wishbone), and ribs, as well as spine. The end result was a bird with only leg and wing bones. I have done that, and it worked out fine. But for the life of me, I cannot find that tutorial. Prolly can muddle thru, and will.
    Was it here or somewhere else? Do not know.

      Good luck with that. I just remove the backbone, then flatten the bird.

        I just blindly worked my way through that. Had no tutorial. I just looked at it with a pair of poultry shears. It came out OK.

        What's left of rib bones come out cleanly, just run a knife under them, and then finish with poultry shears.

        The wishbone is easy. Can see it at the front of the breast. Chef Tom illustrates in this vid at about 3:14 mark.

          That sounds like something Jacques Pépin did. He has more than one tutorial on the subject. Just google this:
