    Testing testing.

    Got a cook for a cause coming up and I'm really working on a good chicken. Did a test yesterday that was beyond fail. Doing a butter bath today. Hoping for better results.

    note: I know the chicken ain't pretty its just a skin test. : )

        Looks like you're focusing on thighs. Have you considered huli-huli chicken? That's always a crowd pleaser ...

          Ahhhh no Its a BBQ theme. But I would like to see some pics of your Huli Huli cooks. I may be inspired to change my direction.

            I think chicken would keep me from competing. Unless it was a half chicken and I could just hang in the Pit Barrel.

                Chicken is off the hook money. Skins a fail. Test goes down as a fail. Round 3 tomorrow. : )

                  This would have worked if I had left the skin long and pinned it. That's the next test. Oh and way less country crock will be fine.

                Jon Solberg I see you are only lighting partial coals, is that always how you cook chicken? Just askin as I don't do much chicken but I thought hot and fast and I light all my coals. Just a thought not sure what you consider fail.

                  With the partial coals I was still running 375 at the grate. I'm good with that. Skin came lose. It was trimed to short. =FAIL

                    Here is the only pic I could find. Huli'd indirect on my Genesis gasser with mesquite chips in a couple of foil pouches then seared at warp 10 over the sear station. Sauce was Meathead's with minor mods: an extra cup of pineapple juice and an extra 1/4 cup of brown sugar. It was awesome! You'll have to pardon the mess on the plate ... DW snapped the pic before I could wipe the edges.

                    Edit: Forgot to mention that I held the indirect temp to 325 throughout the cook. Skin came out fine. I later tried it on a whole bird on the rotisserie (over a drip pan to simplify cleanup) ... it was very good but thighs are our favorite. PBC Huli-Huli experiment next ...

                    Test 3. Did skinless. 1/2 strtength Game Changer. I'll test this again but I'm going with this for now. I did a couple of different brand skin on pices in the mix just to get a different texture. No gain there.
