    Wedding

My son is hosting a small wedding (20 people), and asked me to grill something for the dinner. It turns out the facility only has a gas grill. Any suggestions?

I have no problem with a well seared steak from a gas grill. With a few skewers of shrimp you could lay out a nice surf and turf.

Sorry I didn’t notice the category was poultry. My best experience with chicken on a gas grill was with plain old bone in, skin on thighs.

Can you take one of your cookers there, a kettle or whatever you have? Otherwise -- and since you put his in Poultry I assume you're thinking of cooking chicken? -- marinated or plain grilled chicken thighs cook up very easy, they're hard to mess up, and are a good crowd pleaser.

If not limited to chicken, you could smoke up some pulled pork and/or pulled beef and reheat there.

If you're focusing on chicken, I'm another vote for thighs. They're very forgiving and flavorful. Also very inexpensive if you get them somewhere like Costco.

I talked someone out of chicken for a wedding. I did country style ribs. They wanted breasts.

        Bingo on the thighs.

Once I had a deal like that and cooked every thing at home a day or two before then warmed it up on the gas grill. Less stressful.

            Thighs or quarters.
