    Leftover Smoked Chicken Recipes?

    So...I've got a bunch of smoked drumsticks and breasts and I'm trying to figure out a good use for them. Chili? Salad? If you have any good tips or recipes, please let me know?

    Chicken chili, tacos, nachos and chicken salad are our favorites for leftovers.

    Empanadas! Shred the meat, mix with your sauce of choice and add to empanada shells. I do this all the time and most recently with some leftover smoked chuck. After you make the empanadas you can freeze the unbaked empanadas. A brush with egg wash and a 20-30 bake in the oven and you have fresh empanadas.

    One thing I like to do is dice or slice up the chicken meat and then put it over some brown rice mixed with frozen peas and carrots. (I like to drizzle the rice with some EVOO and salt, pepper, and garlic.) Decently healthy and quick leftover meal.

      chicken noodle soup :<) I do the same after turkey day I freeze a bunch and the bones for homemade noodle soup

        Whenever I smoke chicken, I pull the meat on the leftovers and package, dark and white meat together, in 1 lb portions and freeze them. They come in so handy added to pasta, soup, stews, etc. Anytime we want an extra bit of protein, a bag of that pulled chicken is a good choice.

          That's a great approach. Any issues with taste or texture after freezing and thawing? I have a number of other projects going on (butter chicken, etc.) that parking this batch might be the best option...

          No issues whatsoever, Livermoron , with taste or texture after freezing/thawing. I also use the pulled smoked chicken for Indian dishes, just as you are contemplating.

          I always have individual vacuum-sealed bags of smoked chicken breasts on standby in the fridge or freezer for salads. I microwave them while slicing a tomato. For variety, I rotate the rub or seasoning for every batch.

            Any recipe that calls for cooked chicken. Chicken Pot Pie is a favorite here.
