Instead of whole chickens, I used boneless skinless chicken thighs and marinated overnight.

Do you want roasted, or grilled, chicken? I've spent a lot of time in Peru, on medical missions, and always bring back cookbooks as my souvenirs. Still, the Peruvian dishes (other than ceviche, a whole 'nother thing) are best with recipes I find here. I have some online, some in books, and many of them are basic roasted or grilled chicken. Hate to be picky, but are you looking for marinade, or sauce, or particular cooking method?

I was looking for something different to cook on my new rotisserie for the kettle and I ran across a recipe for Peruvian Chicken. Anyway I just used what i found. It similar to what barelfly shared. So I was just curious about a recipe.
