Goose is on my bucket list. I've wanted to try one ever since my Dad first read me "A Christmas Carol". Every year I tell myself "This Christmas I'll do it!" and then I see a beautiful rib roast or get a jones for eggplant parmesan and forget all about it.

One of my uncles used to make a goose every few years. He was the only one that would eat it. My mom forbid me and my sister from trying it. Everytime he made one it was hilarious watching him and my mom and aunts argue about it. One year he gave one to one of my cousins to raise, then right before Thanksgiving a couple years later the goose disappeared. He told my cousin it must have flown away, but wouldn't you know he had goose for Thanksgiving that year...

I’ve never had farm raised Goose but have cooked wild goose many times i have found it best to breast them then you can cook them many ways as with most game you want to cook them on the rare side or they can get tough smoking is a great way to cook them I use a cayenne rub and smoke them about 2hrs cut them across the grane and serve them. You can also make a sweet and sour goose in the microwave they also grind up and make great hambergers. I never had much luck roasting them as wild bird have to much fat in them.

I had several wild geese from a hunting trip a few years back. Was recommended to fillet the breast meat out of the carcass and cook in a crockpot with Italian Beef seasoning. Made some good eating.

Not everyone would enjoy goose. Go with some duck first in conjuction with another more common protein.

They were always a bit higher than turkeys, maybe $50 or $60 for a 10-12 pounder. Last time I priced one was at Woodman's in Illinois and it was in this range, but that was four or five years ago. The brand we used to get was from a farm out of Canada, I can't recall the name, but if I saw it I'd recognize it. I would not spend over $100 on a goose.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
What is all this sexism. Why just goose? Why not gander? I always heard that what was good for the goose, was good for the gander, after all.
