    Ground Chicken Ideas

    Hey! My chicken supplier gifted me lots of ground chicken. I’ve never used it before. Thoughts? Favorites?

    We use ground turkey in place of ground beef. If that helps.
    Chili, meatloaf, meatballs, casseroles, spaghetti, but not too good for plain old burgers.

    It's pretty bland so I'd use it in strong-flavored stuff, like a chili or tacos. One idea I saw recently, but haven't tried, is to mince bacon, pre-cook it a bit and then mix into the chicken to form burger patties. Sounds like a winner to me.

      SheilaAnn - my sister had a roughly 200-year-old cat that she actually had to feed raw minced chicken breast for those last dozen or so years it was dying...

    Mixed in with other meat for meatloaf. Besure to pick out any chicken lips or toes.

      The only thing we use ground chicken for is Japanese Tsukue made in the form of meatballs.
      Tsukune are delicious Japanese chicken meatball skewers glazed in sweet yakitori sauce. It‘s easy to make at home with a broiler or grill!

      We SV chicken breasts and then pull them, add in cream cheese, green chilies, etc..

      might be an option with ground as well.

      would make a great filler for enchiladas….

        Woks of Life has recipes for Mapo Tofu and Mapo Eggplant that use ground pork. I'd be willing to bet that chicken would be good in them, too. Might just have to add some oil or lard to make up for the lack of fat.

          I was thinking of lions head meatballs and cut the pork with chicken. BF said we should eat less beef and pork and chicken is better. I Batman-slapped him and he sees the error of his ways. 😝😝😝 jk

          I was also thinking using a Guisado flavor profile for tacos, etc. love the skewer idea above.

          Believe it or not but ground chicken works pretty well with smashburgers and also chopped cheeses.

          the higher ratio of cheese to meat in those (and chopping the cheese into the meat in a chopped cheese) helps mask the leanness. You do need to use more fat on the griddle for those - I don’t tend to grease my griddle when using beef but do for ground chicken

          also for something way different, you can replicate Quality Italian’s chicken parm pizza. See https://abc7ny.com/amp/chicken-parm-...ality/3507782/ It’s a basically a giant ground chicken patty that is fried and is topped and served like a pizza.

            Chicken lettuce wraps. I make this one with ground chicken:
