ID:	1549879 I keep my wing recipe very simple. I generously dust with my favorite rub (shown) and cook the on the Weber kettle with a Vortex. Dipping sauces on the side. Yum.

        Personally, wing recipes are a dime a dozen. Everybody has one and they are all good, so whatever you choose is going to be awesome. What I believe is critical is how you prepare them. Some posters have already been giving you some options. I'm a Vortex guy when it comes to wings. What equipment do you have?

          I'm seeing a lot of folks suggesting the vortex (which I unfortunately don't have). I've got a Traeger pellet smoker and Weber Genesis gas grill. I'm probably going to smoke them first on the traeger and then finish them off on the sear station on the weber to get a crispier finish. I've also got a fire pit with an area for grilling with coals, but it's dirty as hell and all open air (no dome) so not sure I want to risk ruining the wings.

          Nagle Bagel - Sounds like you've got good equipment. I'd look at doing them on the Traeger and then frying. Never deep fried after being Vortexed myself, but sounds so good.

        KFC - Korean Fried Chicken aka Gochujang wings. The sauce is amazing but the shatteringly crisp skin is to die for.

          I've been seeing a lot of recipes for Gochujang wings floating around the internet and haven't made them yet. Might be on the menu for this Sunday!

          Nagle Bagel I make grilled gochujang chicken and it's pretty damn good. This is the recipe I started from

          Delicious and flavorful spicy gochujang chicken recipe! Korean chicken thighs are marinated in spicy gochujang sauce and chargrilled on the BBQ. Yum!

        I would dry brine the wings with your favorite rub mixed with some corn starch. The corn starch helps to dry out the wings for a crispy skin. Put the uncovered, dusted wings on a cooling rack in the fridge for 5+ hours. I then use the Kettle with the Vortex. Put a chunk of your favorite smoking wood on the grate above the Vortex, not in it. It does add some smoke flavor. All vents are wide open and let the temp rip. I do spray the wings with 50/50 of Apple Juice /Apple Cider Vinegar as needed and just because I always have. Probe the wings until they reach your desired temperature. Brush the wings with your choice of hot sauce, BBQ sauce etc and set the sauce with a couple of minutes on the grill and enjoy the wings with or without your favorite dipping sauce and cold beverage.

          Interesting - I wouldn't have thought to put the cornstarch on during the brining stage (I usually add it after the brine is done if I'm using cornstarch). Do you think it comes out crispier by adding the cornstarch early on?

          Thanks for the recommendations everyone! What I've learned:

          Cornstarch sounds like a great option for getting crispy wings
          Lot of love for Franks Red Hot
          I need to get a kettle/vortex

            Wings came out great . Ended up making Gochujang wings (but also made some regular BBQ using Blues Hog)

              I just made about 10 lbs of wings for the superbowl. If you like them fall off bone and very juicy. They always get finished before everyone elses different offerings. I’ve made these for the last 10 superbowls.

              I dry brine them overnight. I bake them in a covered pan at 180 f. for 4 hours, about halfway to 3/4 through, I drain off the fat.
              After 4 hours I transfer them to sheet pans and brush them with your favorite sauce. I try to put them skin down first but difficult with about a hundred wings lol. turn on the broiler keeping your eye on them so they don’t burn. Flip ‘em and continue.

              so this works for really good for large gatherings. Since the superbowl was at someone else’s house I cooked them the day before and just used their oven for about 20 minutes to broil them. The skin is slightly crunchy. Did I mention there is a stampede to get them before they all disappear?

                Anybody have a killer wing sauce they'd care to share. I have tried most of them above. I love a good asian inspired sauce to toss some wings in. I have SheilaAnn 's recipe marked and I am gonna give that a go this week!

                Any other HOT and spicy recipes out there that you swear by? Steve B has a great one I know. Tough to pull that one outta his hands though.

                I tried this curry lime wing sauce from Texas Monthly a couple weeks ago and was blown away. It’s not cheap to make, but I thought it was amazing. I didn’t smoke and deep fry the wings, just grilled them. https://www.texasmonthly.com/recipe/...ry-lime-sauce/
