Last night I really wanted some chicken wings. I have been sick for about a month now and the only food that has consistently sounded appetizing has been chicken wings. I had never cooked them in my pizza ovens but decided to give them a try.
Overall I loved it. I dry brined the wings and then seasoned them with Meat Church Holy Voodoo. Sprayed a bit of beef tallow in the pan and it only took probably 6 or 7 minutes for the wings to cook. In my kettle with the Vortex it usually takes 30-45 minutes.
Flip the wings often and keep them moving or you will end up with some that are just a bit too charred.
The texture of the finished wings was great. The skin wasn't rubbery at all and had a great bite to it and the meat was still nice and juicy.
I don't know if the pizza oven will always win out over my kettle and a vortex but if I am already cooking pizzas and want some wings to go with it I will definitely cook them this way again.
