Long before I tried to become a serious barbecuer, and the days when I only made hamburgers, and hotdogs I did some grilling of whole chickens on the Weber poultry infuser. This was long before I heard of beer canned chicken, and I continued after I heard of beer canned chicken, which seem kind of disgusting to me to leave a beer can inside of the bird. It always came out good and the pan always captured much gravy and the family always loved it. Now that I’ve done much reading and I’ve read many of the articles written by Meathead about how Beer can chicken doesn’t work and how the barbecue Bible says it still makes good tasting chicken , Meathead et als research makes a lot of sense. However, I have not seen anything written about the Weber infuser. Is that just basically an upright roaster and does nothing to contribute to flavor.? Does its construction work differently from a can of beer?

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.

The ceramic non-stick Weber Deluxe Poultry Roaster holds liquid in its center cup, has a cap to lock in steam, and captures juices for basting.
If so, if that center hole is covered with the spiky thing that sticks up into the chicken, I kinda wonder how it would be different than beer can chicken? The issue with the beer cans is that they block air flow into the cavity, and increase cooking time, since the inside of the bird has no hot air going into it. If the roaster is open in the middle, I can see that being a non issue...
