Pick up some of the Texas Pete Wing Sauce and give it a try. I’m not a fan so prefer the straight TP Hot Sauce and add my own butter.

Pkgs of actual whole wings got really expensive there for awhile, but about the first of this year the prices were coming down. So I have taken to buying the big Styrofoam trays of whole wings when they are on sale, separating them myself, doing a dry rub of kosher salt, and then vacuuming them in 12 packs. Small gathering? One bag. Big gathering? Multiple bags. I am thawing 12 pcs for a family gathering tonight!
And because I'm the guy who put that together, its guaranteed to be 1:1 ratio of flats to drumettes!

Haven’t seen these before, not that I’ve looked for them but, are they just the fresh chicken wings Costco sells with the rest of their meat?….in a styrofoam package like most grocery stores sell?

I know my Costco like the back of my hand, and I've never seen these? Are they in the refrigerated meat section, I'm guessing?

Pretty sure the air chilled wings are a much higher contamination rate though. Doubt that matters when frying the beejesus out if them though.

If you can find frozen wings where the only ingredient is chicken they will cook up fine. It’s when they add the 10-15% solution of salt water to them they are disgusting.
I am lucky enough to be able to get a 40 lb. box of fresh jumbo cut chicken wings from anywhere between $56 and $70 dollars.
I have a two to three friends I’ll split these up with. One of them likes all flats, one of them likes all drums and me and the other guy like both.
I’ll bring them home and seal them up in Foodsaver bags. I’ll package the drums and flats 6 per bag and I’ll make the mixed bags 4 of each for a total of 8 wings.
Once frozen these wings always cook up great since there is no added anything.
And when they say Jumbo they mean it. I wear size 3X nitrile gloves.
I do love a good deep fried wing and vortex cooking them on my kettle is delicious but I find the best way to cook them when you want to sauce them up is in my air fryer.
I’ll twice cook them. First I cook the wings for 20 minutes at 325°. This fully cooks the wing and renders out the excess fat. I then take the wings out of my air fryer and drain the chicken fat that had accumulated and then set it to 450° and crisp up the skin for 5 minutes.
This creates a clean tasting crunchy wing that sauces incredibly.
Standard Buffalo style (Frank’s Red Hot, butter and white vinegar)
Asian sticky wings (Reduced down Bachan’s BBQ sauce and brown sugar)

Panhead John I am with you on the wingettes. In my opinion they are the perfect blend of white and dark meat. I picked up a bag of frozen the other day and the wingettes were scarce. I think as most have indicated the poor performance of the wings is tied to the amount of water solution.

Panhead John No pics, but I did a little experiment today. I Vortexed some wings today doing frozen ones that were tagged as containing up to 12% chicken broth and some fresh ones in no solution. The ones in the chicken broth were more moist while the fresh ones were more crisp. I have another experiment planned for the Big Green Egg later.

I've pretty much taken to buying whole wings, and cutting them down myself. That way after discarding the tips, I have half drummettes and half flats. I like the flats, SWMBO likes the drummettes, so its a match made in heaven... If I had little kids I guess I could toss them the useless tips, haha....

LA Pork Butt Here’s my initial impressions. I think I’m gonna like them. They have a nice feel and look to them and smell like they should, which is very little. I opened one of the 6 bags that come with the package. In this bag I had 5 drums and 4 flats, so a fair distribution of pieces IMO…..about 4 1/2 total wings per bag. The other bags might have a little different ratio, or number of pieces, not sure….I would expect them all to be about the same though. The size of each of the pieces I would say is about average, not the biggest I’ve seen but not the smallest either. They are not frozen and located in the meat section of Costco.
I like buying them like this, already cut and ready to cook. The price isn’t bad either, only $2.49 lb. The whole wings at my Kroger are reg. $4.29 lb. but are currently on sale for $2.99 lb. with your Kroger card.
Ok, to answer your question, on the bag it says “Up to 9% water retained from chilling process”. This doesn’t bother me at all and not bad in my opinion, the amount of water and the fact it’s not injected with other stuff. I’ll post later tonight how I like the taste of em. gboss really likes them he said.
I got 9 pieces out of 1 bag….dry brining now.

By the look of those wings they look to be coming off approx. 7 week old birds, as opposed to possibly 9 weeks for those others. (not 100% sure on the 9 weeks) I've been around 7 week old birds for 21 years, the 9 week old guesstimation is based on the size of those birds compared to the ones I'm around. I went to that plant (P-206) a few weeks ago. Same company BTW.

I picked up never frozen whole wings at Aldi for $1.99 this week. They were the ones used in my above mentioned experiment.
