I'm in an AirBNB right now waiting to close on my new house. Don't have my grills; cooking a whole chicken in the oven for the first time. Hope I don't mess it up. Didn't use my oven much before now will have to get used to it for the next couple of weeks. Let you know how it goes.

For all that we talk grilling and smoking here, I still do most of my cooking indoors. Everything is in the same room, and I’m lazy. And from November until March the weather restricts what I can do outdoors.
Indoor chicken faces the same challenges that outdoor chicken does, mostly getting that skin right. Use the same techniques. Use a thermometer.
But I don’t usually do whole chickens. I’d rather sauté thighs in a skillet, the indoor analog of grilling them. Sauté with herbs, deglaze with white wine and use the sauce to serve over rice. Mmmmm.
