So I have a 25ish lb bird I'm smoking tomorrow, it's been in the freezer for a year so (started defrosting a few days ago) might not even be good but it's gonna be my first smoked turkey. Not planning on injecting but am doing rub on and under skin. It may or may not be good, but the point of the exercise is timing and prep.
Anyway, I'm going to have a ton of leftovers. And I found a recipe for leftover turkey breast jerky that looks ok, just wondering if anyone has done it, or maybe has a better recipe.
Since no one answered, I just went ahead and did it. Didn't waste too many spices, just some brown sugar and dales marinade with a little cure.
I did test a few slices with skin, those did not work at all.
Downside of leftover poultry is you cant really cut thin slices or it wants to fall apart.
5 hours at 175, and it is jerky. Flavor was OK but could be vastly improved on. I'm not a huge fan of poultry jerky to begin with, and due to not being able to make thin slices I won't do it this way again.

Sorry for not responding, I just saw this. The jerky looks good. You obviously found the turkey was still good. Depending on what kind of freezer you have I was going to say that it would probably be ok, especially if you have a chest freezer. I have a turkey in my freezer that I was going to smoke earlier in the year, but then decided to wait and use it for Thanksgiving, since turkeys are going to be in short supply and expensive due to thousand of them having to be destroyed earlier this year. Everybody needs a place to start.
yeah I cooked the turkey a few days ago, it was ok. Figured I'd experiment with the leftovers since in my mind the bird was a wash from the get go. Experiment worked, just not my thing. I'm sure they coyotes will like it
