I am going to smoke 3 turkey breasts the day before Thanksgivingn. Can I smoke than finish c​ooking on Thanksgiving or do I Have to complete process. My Problem is that I have an electric smoker and it takes so dang long to grt to proper internal temp. So I smoke and then complete cooking inside in my roaster.

Welcome, and I would not do it the day before, it should only take you a couple of hours. If anything put some smoke on em for an hour or 2 and finish in the oven at a higher temp to crisp up the skin. I would suggest that anyway since most electrics don't seem to go past 275 in my experience.
If you do it the day before, you need to cook it all the way through.
