    Turkey Breast

    I recently had turkey at a restaurant in NC and it was the best I have ever had. Someone teach me how to replicate this? BTW, everything was delicious but the turkey was surprisingly so.

    Turkey breast finishes off very moist and tender at about 155 F. A lot of times people make the mistake of going above 165 F. I have converted people who swear they only like dark meat to loving turkey breast smoked to 155 F. (Dark meat turkey still needs to go to about 180 F).

    I've been using turkey tenderloins lately and those are my new go to white meat. They cook fast and are very moist if not overcooked.

        I smoke breasts low. I inject them liberally and wrap them in a cheese cloth, spritzing every 1/2 hour. I cut away the cloth in the last 1/2 hour and crank the heat up to crisp the skin. They are always moist, never mushy.

          I wet brined overnight a wild turkey breast once and cooked it indirect on a Weber kettle. Came out fantastic.

            Aaron Franklin's BBQ Turkey Breast recipe with his Espresso BBQ Sauce is delicious. There's magic in his wrap-braising the turkey at the end in foil with a cup of butter.
