I wonder if smoking/BBQing a chicken without the beverage can would be the "best" way to roast a chicken? Just may have to give it a try. Safeway has chicken on sale for .99ct/lbs. I am thinking of better airflow through the cavity.
If it works perhaps, I will call it "Beer Can-Less Chicken."
I have never used a beer in my vertical roaster and the chicken comes out extremly moist and flavorful. I like the Simon and Garfunkel rub when I do chicken, have used others but the S&G is my favorite
I have one of those or one similar and have only ever used it without a beer can. I don't see using it again though as I have other preferred methods now.
Vertical roasting works really well and we use the technique quite often, especially with quail and Cornish hens. I have also used them also for much larger birds like turkeys. The big difference between vertical roasting racks and the "Beer Can" method is that vertical roasters permit unobstructed airflow throughout the cavity while something like a can interferes with or blocks this flow. Potkettleblack turned me on to this method and it really does a great job.

This is my preferred method of doing whole chicken on the kettle..
not my picture, but exactly how I set up, except I cover the bottom of the vortex with foil...
I’ll be doing exactly this for tomorrow night’s dinner. I’ll be seasoning the bird with Suzy Q & Simon/Garfunkel NS rub. The Vortex is a roasting machine.

Was told it helps keep the heat indirect...
Also keeps the bird from sitting directly on the coal grate..
Skin gets plenty crispy with the foil. Maybe I'll try it without and see what happens
