    Jerked chicken club sandwich suggestions, please.

    Naw, I just like to talk about food, it’s healthier than eating too much of it.

    But really. I’ve been eating sandwiches for breakfast instead of breakfast food. (It’s okay, I checked on the internet.) Tonight I made jerked chicken thighs for dinner (OUTSTANDING), and I have a leftover thigh, enough for a sandwich tomorrow morning!

    So, it’s going to be a jerked chicken club sandwich. I have some nice sprouted whole grain bread that I really like. I have lettuce, and tomato, and mayo, and some cave ripened cheddar that is really excellent. I have some bacon that I made this morning that will save me the time making bacon.

    The chicken isn’t hot like you get on the island, but that’s easy to fix. I can add as much hot sauce as I want. I have a few different cornichons and gherkins, but those are better on the side I think. What I’m considering as my own twist is either roasted red pepper, or LaoGanMa fried chili oil. But not both.

    There’s plus and minus for both, the main plus being that both are delicious! The minus for the LaoGanMa is that it might compete with the jerk flavoring. The minus for the roasted red pepper is that that is a really strong flavor that can overwhelm the whole pile. But really I think either one should work fine. I usually mix the LaoGanMa with the mayo.

    Right now it’s going to be roasted red pepper. But I can be talked into switching, or neither, into something else entirely. I could fry up some onions, those would be great!

    Oh: and there is nothing stopping me from putting a fried egg on this son of a gun. I’m going to do it, and you can’t stop me.

    When it’s done the pics will go in SUWYC.

    I love sandwiches of just about any kind and will eat them for any meal, anytime of day. Yours sound yummy. I vote yes on the fried egg!

      That sounds fantastic! Curve ball. . . What about harissa? It will play nice with the rest of your sandwich but wont overpower. Or if thats not an option I vote LaoGanMa with the mayo.

        Its not very thick, but I think I can mix this with the mayo, and also use the roasted red peppers! I needed to kick up the jerked chicken anyhow!

            To me, roasted red peppers mean red sweet peppers which obviously aren't going to give you any additional heat.

                We use Grace Brand Jerk marinade along with there Jerk BBQ sauce when we jerk chicken.
                If we can find it we like to serve with Pickapepper sauce as a side garnish.
                Personally I find most hot sauces don't go well with Jerk chicken, except maybe Piri Piri sauce.
                We found a Jerk Hut about 6-7 mins away that is pretty authentic so haven't done our own jerk for some time now.

                    Even though I am late to the party, I would have done a jerk infused mayo. I would not want a ton of hot sauce taking away from the jerk flavor profile. And the roasted red peppers sound good too!

                      The harissa was perfect, though. That particular brand tastes like a lot like sriracha, and has about the same heat. I used maybe a teaspoon, and about 3/4 of that made it to the sandwich. I got a nice tanginess, and some garlic in there.
