It's coming up Thursday, any thoughts? I'm leaning towards chicken, maybe some fajitas or mole. Maybe somebody has a twist to the classic recipes, looking to change things up a bit.

Hmm...need to plan for this, some form of asada would be good, plus makin's for tacos using the asada (and some barbacoa I have in the freezer). I also have some Posole Rojo in the freezer, would be a good side. If this was on the weekend when I have more time I would make Birria Tacos.
I’ve got something called a "chuck tender roast" from Click Akaushi thawing. Not quite sure what I will do with it yet though. Took it out of the freezer yesterday and still frozen like a rock so I have time to figure it out. Maybe burnt ends?
Just boring tex-mex tacos similar to what I've been eating since I was a kid. Tacos w/ 50/50 ground beef and refried beans and store bought seasoning on the boring stove top with boring store bought shells, fresh shaved cheddar, fresh garden lettuce, fresh tomato, several dashes of tabasco, and maybe some sour cream and/or fresh quac on top if she makes it. Pretty spectacular actually, spectacular enough that I don't want to mess with it.
