I'm very interested in trying the spatchcock method, but concerned it either won't fit on the indirect side of the grill (Napoleon Prestige Pro 500), or the pan won't fit under the whole thing. Anyone tried this on a similar size unit? We generally cook around a 14 lb. turkey.
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

Nice grill! You could always spatchcock it and if it doesn't quite fit, roll it back up. The opening in the cavity would still allow it cook faster than a fully intact bird.
