I am grilling 2 9-pound turkey breasts on a Weber gas grill, I have a nice rub but am curious about how long I should plan on cooking them. I have a Weber Genesis II grill with 3 burners, should I put them on either side and only use the center burner to attempt indirect? My biggest concern is how long should I plan on before they are done?

24" Blackstone griddle, 6 Gallon Cajun Fryer.
50K BTU wok burner.
I would go indirect to 5° under finish temp and then finish them over direct heat to crisp the skin if needed. As for how long, it will depend a lot on what temp you plan on running at. At 375° you can expect them to take a couple hours or so and have the skin crisp up nicely with having to resort to a direct heat finish.
