Gotta try it out, right, but short on time. All I have are frozen wings. I can probably get a partial thaw, maybe in some pickle juice even. Think it will work if they aren't thawed all the way?

Can't wait to meet you in April at the Meat-up brother. No one on here I'd rather shake hands with. That said, is there a language tape out there that preps me for whatever it is you speak? Maybe one done by Max Baer?
(You know I'm poking fun right? Also, little ditty, did you know Max Baer's father was heavy weight boxing champion in 1934?)

Didn't the elder Baer KO Joe Louis?
Looked it up, it was the opposite. Still, my memory isn't completely shot.Last edited by CaptainMike; February 10, 2022, 10:17 AM.

Kamado Joe Big Joe III, PKGO, PK300, Jumbo Joe and PBC. Weber kettle @ the hunting camp.
I’ve done it, but wasn’t a time crunch and I just let them smoke(defrost) a while before cranking up the heat. Smoked on 225°F for about an hour and ramped it up to 375-400°F. They were delicious.

Using the Vortex, maybe I'll just put them on a little early while it is getting up to temp.Originally posted by au4stree View PostI’ve done it, but wasn’t a time crunch and I just let them smoke(defrost) a while before cranking up the heat. Lots of knives
3 Weber Performers
1 classic kettle
1 26" kettle
1 Smoky Joe
1 PBC
4 Thermoworks POPs
2 Dot and 1 Chef Alarm
2 Temp spikes
4 Slo n Sears
1 Smokenator
2 Vortex

Wings should defrost pretty fast. Floating in a sink full of cool water. But like you say, "maybe I'll just put them on a little early while it is getting up to temp."

Forgot to update. It worked out...ok. First cook, fairly small/cheap wings so I let them go to long. I was quite impressed with the Vortex, though. Do NOT lean over it to turn the wings on the other side! I'll try again and cut the time between temp checks.
A large weber chimney filled it right to the top, after the cook I shut the vents and found almost 1/2 a chimney left the next day. Flipped the vortex over and used it to sear a couple sous vide strip steaks. All in all I'm happy with it. Next try will include thighs.
