Did a breakfast fatty tonight. Sausage (1 lb), chorizo (1 lb), scrambled eggs cooked with smoked butter (6), hash browns (1 cup), cheddar cheese (3/4 cup), and onion (small diced); wrapped with a bacon weave (2 lb). Smoked with apple at 250 for 2.5 hours until internal temp hit 168. Rubbed with freshly cracked pepper and ground kosher salt. It was really good. About half is left for sandwiches.

Resting; internals were 168 when pulled.
