    Hash browns, chili, cheese and eggs thing.

    Okay, here it is. It was everything we all expected it would be.

    In addition to the obvious major players (chili, eggs, hash browns) I have some shredded Monterey Jack, some red pepper, some onion, an habanero, and a small clove of garlic.

    Fry up the hash browns. On first flip, add the vegetables, then let that go on cruise while warming the tortillas, making coffee, cleaning up stuff, etc.

    I would have done this outside on the griddle, except we are in the middle of the first all-day rain in over a month. I made a choice to use stainless instead of cast iron. Cast iron retains heat better, but stainless distributes heat better and more evenly. I wanted the eggs over easy, and I wanted that crisp, slightly lacy bottom.

    Cheese on chili, under the broiler, eggs on chili, then on to the plate, with a couple serranos and some chives for garnish. I skipped some photos in the interest of speed, I didn’t want the eggs to either cool down or overcook while I worked.

    Money shot. I would have liked the yolks just a little bit runnier, but this is still fine. I wouldn’t send it back!

      Looks really good to me. I call those meals galop, and are mainly seen around thanksgiving left overs, but that is deserving of galop status.
