    Breakfast idea. Tell me I'm nuts, but I won't believe you. I think this should be good.

    I got this leftover chili.

    Before you start: believe me, I ate plenty of chili last night. I just used the same bowl for the last little bit, so I wouldn't have to clean another container.

    And that's not enough for a meal. But it could go into breakfast. Right? It's a damn good chili, by the way. Guajillos, anchos, etc. No tomatoes. Anyhow. I was thinking maybe scrambling some eggs, and spooning the chili on top. Maybe melt some cheese there. M-mm good, right?

    But then I thought, nah. Not enough thought went into that idea.

    How about hash browns? Crispy hash browns. With hot peppers and onions! And some cheese, of course. Then sunny side up or over easy eggs. And a couple corn tortillas.

    “Yes, I’m ready to order. I’d like two eggs, over easy. And hash browns, with hot peppers and onions. Chili with cheese—instead of on the side, could you have the cook mix it in with the hash browns? Thanks! Oh: for the bread, two corn tortillas please. Thank you! Oh, yes, more coffee, thanks!”

    I've had, and made [better], chili omelets! They are fantastic! You are not crazy you will love this. Anything delicious is deliciouser wrapped in, or on top of, egg, methinks. Never done chili hashbrowns though but that sounds mighty good too.

      I'll probably make the hash browns, top them with chili, then eggs, then cheese. Or cheese, then eggs. I can't decide, and don't think it will matter.

    Stacked breakfast enchiladas would be good with leftover chili too.

        You’re a gentleman and a scholar, and definitely not nuts. Chili tastes good on hot dogs, burgers, and fries, and I have no doubt it will be great on eggs and hash browns.

          Is that beef or pork? Looks like carne adovada, but maybe it’s beef. Either way, that’s a staple breakfast out here, huevos rancheros, if you lay the tortillas down and then make the breakfast how you will. Heck, even add in some pinto beans!!! It will be freaking outstanding!!!!!!!!

          or do a breakfast burrito (eggs, hash, cheese etc) and smother that sucker with that goodness of chile you have there and melt some cheese on top as well.

            My huevos rancheros has salsa ranchera instead of chili, and pintos instead of hash browns. But I think we can both agree that there is a really, really wide range of things that you might get by asking for huevos rancheros! Hell, you might get migas, or chilaquiles. But I’ll eat them all.

          It might be sacrilegious, but maybe chilaquiles with your chili in place of the salsa roja.

            Enchiladas like 58limited limited said would be my first choice, but...

            A standard addition to a Denver omelet is green chili, I can easily envision a plain omelet with the right leftover chili BUT homefries or hashbrowns with the standard Denver omelet ingredients incorporated as the side to add some brightness.

            I also can easily imagine a tortilla with any breakfast preparation of taters and some chili as a breakfast taco and then a light scramble of eggs on the side with some of the sauce of the chili

              What about a glorified (or maybe bastardized) shakshuka? Layer chili in a skillet, once hot, drop an egg in there..

                That's a good idea, but there isn't enough chili; maybe 3/4 cupful, if that.

                Yes, you are crazy. Take you time eating it - use as many corn tortillas as you need.
                Seriously, consider scrambling the eggs and folding the the chili inside, or simply serving the chili alongside the fried eggs. I think it would look more interesting.

                  Side note: Air fryers and grocery store hash browns/tater tots were made for each other. (I haven't eaten dinner, and I'm already prepping breakfast in my mind. 😄)
