    An egg is an egg is an egg.

    Just got finished watchin Ethan Chlebowski video on eggs. No link cuz Instill haven’t figgered out how to do it, plus the dang thing is almost a half hour long. Summary of major questions are big buck, cage free, organic, open pasture , female chicken eggs worth it, health wise & taste wise. Bottom line, NO! Twas a bit of a surprise to me. In apperance
    there certainly is a differnce. But in a blind taste test, the differnce is oh so slight that ya may or may not notice it. And once ya put salt ‘n pepper, ferget it. And, the scientific ingredient evaluation hardly matters much. But, the cost, well ya don’t have ta be a rocket surgeon ta figger that out.

    Advantage of yard eggs is you can have them fresher that the grocery store eggs which are usually 2 werks old. Fresher egg means thicker white, thicker white means less egg running all over the pan. Plus with yard eggs you get a deeper orange yolk due to their diet. As a matter of fact, if you feed out your hens on red peppers (little known fact birds do not have capsaicin receptors, they don't taste the heat from peppers), they will have red yolks! Add to that that if you don't wash them when you collect them they last much longer, EVEN WHEN NOT REFRIGERATED. Maybe not nutritionally or taste wise, but I think yard eggs are superior IMO.

      I gotta agree with the eggs from hens that walk around one's own property eating bugs. The yolks are significantly more yellow in appearance. It might all be in my head, sure, but fresh local eggs from chickens that graze in the open are superior...

    I believe that holds true for England as they don't wash their eggs and they don't keep them in the refrigerator.

      Ahem, he did a very thorough test including fresh vs. 30 day. There wasn’t much room fer opinion cept his palate. And again, there was a big difference in appearance.
      I figgered a lotta cages would be rattled by this. It did mine, cuz I wuz a firm believer in gettin my eggs from a nearby farmer.

      Hmm. Well, I'll be the first to admit that it's probably all in my head, but it seems to me like I can taste a difference between my eggs and the commodity eggs. The rule that I follow, though, is this: if eggs are the main part of the dish that I am cooking, I'll either use my eggs, or other high-quality eggs. If they're being used as an added ingredient, such as a binder, or in batters or something like that, you better believe that I'm going with grocery store eggs. I go through a lot of eggs, though - easily two to three dozen eggs of my own and then maybe a dozen or so store eggs. On a slightly different topic, I'm living proof that dietary cholesterol does not affect blood cholesterol. My total cholesterol has never been above 130, and last year it was 114.

        My doc is one of the ones that says saturated fat has more of an effect on cholesterol than actual consumption of cholesterol. He also says genetics trumps all with it.

      Interesting and not surprising. However, I still buy the cheap eggs for most of my stuff. The old man had chickens for awhile but he let the grandkids name them, and he loved seeing them run around the property…..so did the eagles, yotes, coons, weasels, fishers, etc. They did not last long. A friend of mine has chickens and I get eggs from him when he can’t sell them all. They are good, any better than store bought? IDK.

      Ripley doesn’t notice either, not that he’s mentioned anyway. He seems happy scrafing them down.

      I'm with texastweeter on this one. Farm eggs hand picked freshly from the egg tree are better eggs. They have a terroir to them that commodity eggs don't have. I might not be able to tell the difference in a blind taste test, but would be able to tell if handed one of each to cook as soon as they hit the pan. This is a pretty subjective subject, but fresh eggs taste more eggy to me. Plus, your chance of double yolks goes waaaay up!

        I got a double yoke out of our last batch! If I remember right store eggs are candled and the doubles rejected.

        Last year, I actually had 2 occasions where my store bought eggs had a double yolk. I always buy the jumbo size, maybe that increases your chances?

        Yes, almost all double yolk eggs are larger than average.

      I find it hard to believe that a fresher egg isn't nutritionally superior to an older egg, in much the same way veggies provide more nutrients the closer to harvest they are eaten.
      either way, I'll continue to purchase eggs from the local farm. I would rather support them than some faceless factory farm

      I hated yard eggs. It wasn't because I was responsible for picking them, getting into a pecking-punching match with a ticked off hen, and washing the crap off. There was a taste that didn't sit well with me. My mom much preferred the yard eggs over store bought.

      Agreed that fresh eggs are better than any grocery store eggs, but what's even better are FREE fresh eggs. The guy who picks up my spent grain at work gave me 40 eggs the other day.

        I prefer yard eggs over commodity for sure. BUT… when it comes to precise baking, I lean toward the eggs from the grocery because of consistency. Especially if someone is paying for what I am baking.

          Another fun fact, the words best doughnuts cone from Roundrock doughnuts. The doughnuts are tinted orange. These days it's a touch of food coloring, boy originally it was from the use of locally sourced yard eggs, which were much more colorful than the ones these days. Also, if you have ever noticed store-bought poultry gas a yellow tinge to the fat, it is because the feed them marigold petals. The petals turn the fat yellow. This was done because a survey done somewhere showed that consumers preferred chickens with a slight yellow tinge to them. Same for commercial eggs, the marigold petals help them to be yellower, without it the yolks would be even lighter.

          Whats this about girl eggs? 🍳 🥚 😆😂 I can tell just by lookin’ at the yolk from whence they came. Ate farm fresh eggs for 30 years and was
          spoilt. My folks had pharaoh quail and they make the sweetest little eggs a child could want. I go on an egg pilgrimage at Christmas to find farm eggs so i can make proper nogg with brandy. Rest of the time they are unremarkable in my life 🔥🔥🐿️
