    Opinion on this recipe of stir fried cucumber and eggs

    This could go either way? Idk. I’m looking at using stuff I have in unusual ways. I could always make a pepper, onion, and cheese omelet, but this looks… just weird, actually. But if you follow the link, there are folks in the comments who like it.

    Stir-Fried Cucumber with Egg

    Ingredients:
    1 lb cucumbers (about 2-3 cucumbers)
    3 medium to large eggs
    salt
    olive oil
    1 teaspoon minced garlic
    pepper

    Directions:
    Peel cucumbers (either peel off all the skins or leave some skins to create alternating stripes). Slice in half lengthwise and scoop out all the seeds, then cut the cucumbers into thin slices on a bias.
    Place cucumber slices in a bowl and toss with 3/4 teaspoon of salt. Set aside for 20 minutes.
    Beat the eggs and season with a pinch of salt. Set aside.
    After 20 minutes, rinse the cucumber slices under running water, drain and spread them on some paper towels to absorb excess water.
    Place a pan over medium heat. Add some olive oil and once the oil is hot, add minced garlic. Sauté garlic for a few seconds until fragrant, then add cucumbers. Sauté for 1-2 minutes until cucumbers are heated through with no raw taste left. Season with a bit more salt to taste if needed.
    Push cucumber slices to one side of the pan. Add beaten eggs to the empty side of the pan. Let the bottom of the eggs set, then stir-fry and toss cucumbers with eggs briefly. This should be done quickly to avoid overcooking the eggs.
    When the eggs are cooked to your liking, transfer to a serving plate. Sprinkle freshly cracked pepper on top.

    Notes:
    You can also add a dash of soy sauce (to taste) for more umami, or drizzle a touch of toasted sesame oil at the end for more fragrance.
    Please feel free to slice the cucumber thinner or cook them for longer if you like them to be softer.
    I like to keep the scrambled eggs soft and fluffy. After adding the eggs, lower the heat if needed to control the doneness on the eggs.

    My only concern is that there's not much seasoning for added flavor. Maybe hit it with some Texas Pete's or some such on the plate?

      Yeah, hot sauce is de rigueur with eggs. Can the garlic carry this? I just don’t know if I’d be better off with just scrambled eggs.

      I keep trying to think whether doing a quick pickle of the cucumbers first would be better and add more flavor.

    It strikes me that cucumber and eggs are not a match made in heaven. I can’t imagine what you could add to this to make it a happy marriage.

      Idk, there’s garlic in there. Normally I wouldn’t cook cucumber at all, it would be like making a braised lettuce omelet. I’m torn on whether or not it’s worth the effort to try.

      Mosca I think this is the way great discoveries are made, Trying something that no one thinks will work. Of course this also the way great failures are made. We won’t know unless you try. I just had a thought that you could sauté the cucumbers and maybe some onion in Italian dressing before adding the eggs.

      I mean, it’s 3 eggs and a few cucumber. Try it. If you don’t like it, toss it out. Little time invested as well as ingredients.

      I can’t think of any recipe with cucumbers and eggs, but…you never know until you try it!

      maybe add some rice to it, if you think it needs something to bring it together? And I do like Jim’s idea of a quick pickle, or some red wine vinegar, or rice wine vinegar added into the cucumber, or something similar?

      give it a try and let us know!

        I’d just cut up part of an English cucumber and use 2 eggs, enough to make the proportions look like in the picture at the original site:

        But do I want to take the half hour it’s going to take to cut, salt, wait, wash, and drain the cukes? Maybe… maybe not. It’s going to be breakfast, and I’m going to be hungry. I could have that omelet on the plate before the cukes are done giving up their liquid.

          Crack a few extra eggs and have them ready to go….just in case! I’m sure it would actually be good. Just different, but if you like cukes, give it go.

          Heck, my wife had a cocktail tonight that was made with avocado, jalapeno and coconut. And it actually was really good!

          Just give it go! We may have a trend on show us your breakfastses over the next few weeks!

        I like stir fries and I like eggs. This seems way too bland for me. Needs more ingredients, hot sauce, gochujang - anything…

          I mean, if I were to do this, I’d do one of those zucchini or cucumber boats and fill it with egg, seasonings, and other toppings including lots of cheese and peppers. At least, I’d feel like that would be worth the effort.

            Skipping a few steps, sliced cucumbers and place in bowl. Add Dukes mayonnaise instead, as after all it is just eggs and oil. Season with salt & pepper. Will save you about 25 minutes and some garlic.

              Some days you just need something bland. On those days ... this doesn't look bad at all. Why not???

                I like to stir fry, and I'm all in with eggs, but this seems not just bland (as mentioned already) but wet? Cucumbers in my world are not dry, like say, snow peas or peppers, but rather damp and could just become floppy and soft with cooking. I just don't see getting a cucumber to "crisp up" in any way. Eggs are soft, and need to cook a bit to dry out, they also really need something more firm and even crunchy to balance. IMHO anyway. So, a no from me, but if you cooked it here I would try it.

                  Yea, I bagged this one. There just isn’t enough belief in it, either my own or all of us collectively, to raise my curiosity level to the want-to stage. Nobody seemed enthusiastic beyond “let us know what you think”…. Well, I think it’s not worth wasting two eggs, a cucumber, and half an hour for.

                    I dunno... if I have some layin' around, I might try it. I don't think I have the cukes at the moment, though.

                  shoulda stuck with that thought.
                  I make pepper, onion and cheese omelettes… soooo good. Raw Diced onions and sweet peppers are added just before folding and are lightly steamed while cheese melts. Add some Serrano, habanero, or jalapeños too. Woo hoo!
