    How all the cool kids are making potato omelets these days.

    These krazy Gen-§ers, or whatever the society is calling them now. Whenever they find time to look away from their tic-toc-toe games they maybe learnt something from us olds, it might be. Anyhow, instead of putting the hash browns inside the eggs, or on the side, they’re putting the eggs and cheese and fillings inside the potatoes!

    Even one of those is way, way too much food for me. I’d split one of them two or even three ways, honestly. But I have to say, I love this. So many variations of the old favorites are just long and complicated preparations of things. I really like it when a variation is honestly no more complicated than the original, but still changes it enough to make it fun and worthwhile.

    There are maybe a dozen instructional vids on YT, take your pick. I’m partial to The Flat Top King, but they all are pretty good. And, this is pretty obviously not limited to a griddle; five of six at once is, but it would be no problem conjuring up one of these in a standard cast iron skillet, or non stick omelet pan.

    I’ve seen these before on YT as well. Looks great, but as you said, one is still way too much food for me. I love hash browns and anyway to get them though is great!

        Those do look awesome and pretty easy to throw together, I will have to try that.

          I make hash browns at home but have yet to put an egg in them. I saw it a few months ago and want to do it. I cook for one though. My 6 year old for some reason won’t eat hash browns. He’s at the stage where he won’t eat foreign things. That’ll change!!

            Yeah, I looked at doing one this morning. Today was bacon day, and I have the potatoes, eggs, cheese, and the usual omelet veggies (mush, pepp, onion). And I couldn’t figure out a way to make it as a single. I could, but it would be like a half piece of bacon, a square inch of green pepper, half a mushroom, etc. not worth it.

                That’s how I’ve been doing it for years, didn’t know I was “in” 😄

                Anyhow: my “recipe” for tasty hash browns has two key ingredients that take them to the next level:

                A: egg(s) depending on the size I make. 1 egg per 4 taters

                B. bbq pork rub. You get both salt AND flavor. It’s a huge hit. It has to be a pork version that has a bit more sugar than the other ‘types’. 0.5 tbsp per 4 taters.

                So: grate the potatoes, then squeeze all the water out with your hands (very important to get rid of the water). Mix it all in a bowl, then start frying. Tasty!!

                I, too, have wanted a griddle, but knew it would be an easier 'sell' to the DW after we tried some smash burgers on a CI ... did that last night the seed has been planted as they were a SMASH hit! (see what I did there?) 😂
                Saw a YT vid from one of the griddle jocks who made this very thing and that's how this all started ...

                  Do what I did, bide your time and wait for a deal. I joined a couple FB groups, but I narrowed them all down to The Griddle Group - by The Flat Top King, and Pit Boss Griddle Group. When deals come up someone usually posts there. And the general consensus seems to be that there isn’t a bad griddle out there, so you’re okay getting the cheapest one at the size you want.

                  Also, there seems to be a lot of cameraderie, very similar to what I see here (but a little different because fb and YT are a different medium). The Waltwins will post in The Flat Top King’s feed, etc. Everyone shares well, at least from what I’ve seen.

                Wow, those look great! I gotta try this. I have a new griddle I am testing in a little bit, so I will need to give this a shot during testing.
