Most likely, you won’t find sausage biscuits on your cardiologist’s meal planner. I enjoy the occasional, (OK, frequent) indulgence in a pair of them. For these breakfast treats, there are no cardboard tubes to pop or labels with unrecognized elements to ponder. A batch of "From scratch" biscuits and a pound of bulk breakfast sausage from the local meat market are the essential ingredients.
The Perform N Sear with a Vortex full of hot briquettes makes preparation a snap. I distributed the preformed sausage patties on the grate around the Vortex and cooked them (covered) to an IT of 165°, flipping them once during the cook. When they were done, I held them in a square of foil while the biscuits baked.


I brushed the biscuit tops with cream to aid in browning and distributed them around the Vortex. The dome temperature of the PnS runs about 450° with this setup. I know from experience that in about 12 minutes, it is time to rotate the biscuits for even baking.



With a total bake time of about 18 minutes, the biscuits were done.
