    Sourdough today - Pizza Dough and Tartine

    Too hot to be outside today, so stuck inside working with my sourdough; I know, turning on the oven doesn't help with air conditioning cost .

    I need to get more oven spring, otherwise I'm very happy with it. I think it was too long in the second (final) rise; maybe because room temp is a little high. But, my wife made me cut it open for "dessert", and she gave it thumbs up, as did I.

        Well done. Did you use a dutch oven? That will prevent the dough from spreading and force it to rise up.

          RonB Yes, I use a dutch oven preheated to 450 degrees. I cover it for the first 25 minutes. It is a large dutch oven, so lotsa room for spreading.
