Last time I baked bread was over a decade ago with a machine that was long since donated. I saw some of the fellow pit dwellers’ no-knead loaves, and decided to give it a shot. Turned out pretty good. Next time I’ll let it cook a little darker, but this had a great crunchy crust.
Edit: I had the far left and right flame bars lit on high, and the temp held nice and steady in the 400-425 range. I've used this grill long enough to feel pretty confident that it would bake well in this setup.

You just knead to keep on no kneading, and theres no knead for me to explain why, the result is proof.

There's a lot of good info here on AR of course and tons of recipes and videos, but this video from Artisan Bread with Steve is the no-brainer method I settled on. Worked great for me, so if you're a beginner I think it's a great way to start. He's got a ton of videos with variations on his method.
