    Aiding & abetting

        I’m guessing, if you have this book, you also have your own sour dough starter in the fridge?

          I do, I am sad to say I have no idea how good of a starter it is. I made my own starter following the Flour Water Salt Yeast formula, and I went through it to the t, but, life got really busy, and put it in the fridge right away. I have couple more weeks before I can dedicate the time to making bread, or at least the bread I want to try.

          It's a good book--try his bagels sometime. Old fashioned and nicely chewy! I replace 10 grams of the flour (KA bread flour) with 10 grams of vital wheat gluten to help with the "chew". DELISH!
