I have been wondering this for awhile now, but is it possible or advisable to do this? My mom bakes birthday cakes for the family and there is always so much left over, a lot of it ends up going to waste. These are typically not traditional "birthday cake," but German chocolate or Italian cream cakes. My thought was to go ahead and mix the full batch and then only bake a smaller cake and freeze the rest of the batter for another time. The actual cake freezes pretty well, but fresh is better. Has anyone done this? My wife looked at me like I had 2 heads when I floated the idea, but that's nothing new.
