I’ve been back and forth on this in my head for a few years now, but I think this may end up in my kitchen this year…
I really do not have the business to support this as a completely reasonable purchase, but… time not spent in front of a home oven grinding out 2 loaves at a time, does seem like something I would like to do less of. Next I’ll need a bigger dough fridge… I need to find an off ramp or an intervention 😂

And factor in the cost of having a new 240v circuit installed to run the oven. That’s what I would check out first to ensure that your electrical panel can support another 240v circuit and how much it’s going to cost.
Way ahead on that one. I had an electrician install a bunch of new outlets last year, for more refrigeration and freezers, with our panel, he said should not be a problem.
Go for it! It’s a tool. Good tools are nice to have. I learned a long time ago that I should use the best tools I could afford. They make the job easier and could improve the outcome.
Truly I have always preferred to own less, and have better. I try to contain myself, but this one seems to be a real possibility, I need to figure out a few more things, which may take me a month or a few before I would feel truly ready, but it feels good for the first time.
It would mean I have to put my LSG mini cabinet smoker on hold for 2 years. But I would use this far more.
I would be curious if I can find the cost per hour on running that oven, vs the amount of hours I run mine for the same amount of dough. 12 loaves in 1 hour, plus 90 minute warm up. 12 loaves 2 at a time @ 50 minutes per 2. With a bit of recovery time, so 6 hours, roughly,
