I have been working on a Red Lobster Cheddar Bay biscuit recipe that Joshua Weissman posted on YouTube. I have been posting about it in the baking thread. I decided that adding a sausage patty might take them up a notch, so I bought a 1 lb tube of Jimmy Dean Sausage.
I needed ~ 20 patties and I thought that 1/4" thick would work. I started by placing the sausage between 2 pieces of parchment before rolling out, and as sticky as the sausage was, that turned out to really help. The the sausage went into the fridge overnight and then I used a cookie cutter 1/4" bigger than the cutter I used for the biscuits, (to allow for shrinkage), and cut them out. They were cooked on the griddle because I could cook them all at once.
I did not assemble the sausage biscuits, (thus the name Ikea popped up - some assembly required), but let guests decide if they wanted sausage or not. Another benefit was that I didn't have to worry about sausage biscuits coming apart. And they were a hit with everyone but the one vegan in attendance.
