    Is your bread underproofed?

    I ran across this yesterday and thought it might help someone here.

    Evidently this person never overproofs his dough. I posted something similar some time ago, but I think this has more detail.

    I’ve overproofed mine. It’s still pretty good, though, so I don’t really mind. For me, the balancing act isn’t when to stop proofing and start baking; it’s when to care enough to not rely on a timer, and how much I want to pay attention or should I just go do some errands and see what happens. I usually just go on errands.

      Had to do a double-take on the topic line... At first I thought it said "Is your beard underpoofed?" and I wondered how they hell he could possibly have known...

        Mine comes out nicely proofed to a little tighter air pockets. I'm just happy to get a nice rise at this altitude, I don't worry about it anymore, it is what it is. Frequently brownie mix brownies come out brownie cookies, altitude barometric pressure who knows.
