I’ve overproofed mine. It’s still pretty good, though, so I don’t really mind. For me, the balancing act isn’t when to stop proofing and start baking; it’s when to care enough to not rely on a timer, and how much I want to pay attention or should I just go do some errands and see what happens. I usually just go on errands.
