    Biscuits on a Griddle?!?!

    We are doing spaghetti tonight because my wife opened and barely used a bottle of Rao’s while I was gone a couple days ago. I definitely want to do biscuits with it, but with it being 98 here in Chicago today I really don’t want to do them inside. I’ve seen some recipes for doing biscuits on Blackstone griddles and they look like just typical biscuit recipes baked on the griddle. Has anyone ever tried this?

    This is on the Blackstone site. It is for canned biscuits, but I would think the cooking times and instructions would be similar for any kind. I've seen a friend put frozen ones on their griddle, and put an upside down aluminum cake pan over them to keep the heat in.

      Never heard of griddle biscuits. I would think it would require a thinner brisket, and a flip mid cook, and will come out more like a flatbread than a traditional flakey biscuit. Let us know how it comes out!

      Personally I think you would be better off baking the biscuits indirect on your kettle. Easier to get 350ish like an oven, and follow a traditional biscuit recipe that way.

        Not exactly to your question, but here's some canned cooked on the Bronco with a griddle insert. I would say the key was find the place on the surface that's near target temp and then cover it to contain the heat all around.

          1. Try baking them in a Dutch oven set on the griddle.
          or
          2. Find a deep disposable aluminum foil pan. Find a rack that fits inside. Put some parchment paper on top of the rack and set on griddle. Put cut biscuit dough on parchment, and then cover all with aluminum pan. Depending on griddle temperature start checking around 10 minutes in.

            If i remember, The Flat Top King posted a video recently that included biscuits on the griddle. But I can’t find which video it was that showed this.

              This been delayed a little bit because we decided that I would wait until we can get some meatballs put together for the Rao’s tomorrow. We usually do cheddar biscuits with this type of thing but traditional biscuits were surprisingly good with it last time we did it. Thank y’all got the ideas. I’ll let y’all know once I execute one of these!

                Alrighty! This one got a little more creative as I made my cooking decisions tonight!

                I had already decided that I was going to use the cast iron for the meatballs on the grill so they don’t fall through the grates again. Then I came up with an idea: what if I just put on a second cast iron and did the biscuits on the grill at the same time as the meatballs! Genius!

                I made a couple changes to my Rao’s meatball recipe. It said salt to taste…I severely under salted last time. This time I went by the dry brine standard: 1/2tsp of salt per pound of meat. It worked great!

                I started with the meatballs on the indirect side and the biscuits direct. After flipping the biscuits, I realized that the meatballs were cooking too cool and the biscuits too hot, so I rotated my grates and had cooking perfection!

                    When I added noodles, which is usually a no no, I had to make her sit down because she was so happy with it and had her thumbs so high, lest she fall down the super steep stairs right behind her…

                  Any time your kid likes what you made is definitely a victory. Nice job!
                  Maybe I missed this part, and I do love the drive to pull this off on a kettle, but why not use your new griddle for this cook?

                    I specifically wanted the grill taste for the meatballs. I felt like it was a better fit for this one! My new drive to keep cooking heat from fighting my AC has driven me to use the kettle more in addition to getting good use out of the griddle.

                    I also wanted the oven effect I could get with the lid closed for both the thick meatballs and the biscuits.
