Is adding vital wheat gluten to AP flour as good as buying bread flour? It seems bread flour is getting expensive. Adding vital wheat glutens seems like a big savings. That's if it really works.
Has anyone tried this? If so what were your results?

I've read quite a bit about VWG on King Arthur website, etc. I usually add it to White Wheat Flour. It would be good to learn more about it. Good Post troymeister.
Mixing AP flour with vital wheat gluten isn't quite the same thing as bread flour, but it works fairly well if bread flour is expensive or not available and you want the benefits of a higher protein flour.
In bread machine I found that I could use AP flour plus added gluten t but it seemed to not work as well for my sourdough. I resisted getting bread flour for years but it works much better for my sourdough.
