I did something stupid yesterday!
I fed my starter Friday night, mixed up some no-knead dough with it Saturday morning, and put it in the fridge after 3 hours of hourly stretch and fold, to ferment for 48 hours or so. Pulled it out on Monday to bake, got it into the 500 degree oven, reset the temp to 450 degrees, and set a 45 minute timer to remind me to pull the lid off the dutch oven and let it ride the last 10-15 uncovered.
I promptly FORGOT the bread was baking as I got involved in phone calls in my home office, and never heard Alexa in the kitchen indicating the timer was expired. I finally remembered, sprinted for the kitchen, to find Alexa had been alarming for 48 minutes!
So the bread went a total of 1 hour 33 minutes at 450 degrees in a covered dutch oven! And guess what? Other than being a little crustier than usual, it was great! The kids dropped by and ate half the loaf last night with salted butter spread on it.
So apparently bread or at least no-knead sourdough bread can be a little flexible in the timing! I think that keeping the lid on the forgotten dutch oven was the only thing that saved this loaf.
