    Roasting almonds

    I see a recipe for 12-24 hours at 200-F.

    They are going in some chocolate candy bars.

    Just trying to get somewhat close to a Hershey's with almonds.

    Any preferred experiences??

    12 to 24 hours seems way to long to me. I smoke them for about 2 hours. Keep in mind that Hershey's doesn't smoke them so if you're going for the Hershey's flavour profile you'll want to roast them in an oven and not smoke them.

      I'm sure the smoke pick up will be essentially nonexistent on the pellet. Mainly concerned with texture. Thanks!

    12-24 hours? Is that some sort of sous vide recipe for almonds? 10-15 minutes tops in the oven or pellet but about 20-30 minutes if going low and slow at 225.

      That would tempting to try, sous vide, not the time. That lady must have been doing a specific species that grows amongst the Sequoia.

      My wife does pecans in the oven 2 hours at 200
      she ask me to do a batch-i fell asleep, by morning, 8-9 hours at 200 left them very dark and dry. I would think 2 hours would be plenty.

      When I roast almonds to make a gluten free crust, I do so for about 20-30 mins at 300F. Afterwards, I have to let them cool to the touch so they will grind into dry bits and not be oily.

        OK, I may do the pellet just so I don't heat up the house. I got some candy bar molds in. I "should" be off tomorrow.

      I am not sure the difference between roasting and toasting but when i toast nuts i use a baking sheet and set the oven at 325. I would be concerned to try to go for hours even at 200.

        Thanks for the link. I will try that.( we have only done pecans and do not soak them) coat with a bit of melted butter and sprinkled with salt.
