    Getting closer to what I am wanting from this loaf. A few more try’s I may have a bit of it figured out.

          The details on this are

          TFW 800
          Hydration 65 5
          Levain 25 5
          Salt 2 percent
          70% bakers Chocolate (not chips) 15 percent, next time I will do 20 percent, and I will also spray the dough with water and sprinkle cocoa powder as well.
