                  Yup, all indoors!
                  It was 19° here, an bad windy, an I didn't feel like firin up a smoker fer jus a couple chops...
                  Smoked meats is decidedly better in this, can use ham, hocks, belly, country ribs, etc., usw... it all works out jus fine.

                  Your's look pretty epic there Bonzey !! Believe it or not I just did a big pot yesterday myself. Used smoked ham hokes with half a pound of bacon. Mighty tasty !!!

                      Pass on the Black Eyed Peas... I think I'm the only person south of Minnesota who can't stand them! lol That's the way it seems, sometimes, anyways!

                        Don't fret. You're not the only one. I have a pot soaking right now. When my wife came home from work she saw it and said "I know you're not expecting me to eat those". I'm not. They're for 30-40 lunch friends Friday.

                        You might try purple hull peas. I prefer them over BEP.

                        Once ya do bacon in th oven, ya'll never wanna fool about with it on th stovetop, again...run bout 275°-300°...beyond that, it starts gittin more splattery...

                        Mr. Bones is right. The only time I fry it is when I'm camping. That's just to irritate the neighbors. I use an old cookie sheet with a rack on it. Looks like Mr. Bones uses parchment paper. A lot less cleanup using the oven.

                      Mr. Bones Do you use the Slap Ya Mama as the dry brine, or do you salt separately? Got summdat, and got summadem loin chops for tonight. Will try it on some and Henrik's new KC Royale Pork & Poultry rub on the others.

                        I was pushin th big red EASY button, but, quite frankly, I vastly prefer my own Cajun seasonin to SYM...
                        Look, I put salt on Bacon, fer cripes sake (pics above). I love salt.
                        But it is jus way too salty, in proportion to th spice mix, even fer me.
