    Re-simmer pinto beans?

I made up a pot of cowboy ranch beans yesterday using dried pintos. The flavor is awesome but the beans are not as soft as I would like them. Can you/should you re-simmer to get a softer consistency?

I've never had a problem doing that. Have at it.

Thanks CC! Out of the fridge and back on the stove for some additional cast iron simmer love

Sometimes, if the beans are too old and dried out to begin with, you will never get them to soften, no matter how long you simmer them.

How did it work out with your batch?

BTW, my current favorite brand of beans is called Casserole.

Morning gcdmd; the beans turned out great. I simmered them for an additional two hours to get the softness and texture that I like. The brand I used was Goya. I'll have to check if my local grocery store carries Casserrole.
