    Should I cook these piquinto beans in beef broth. (I also have chicken broth.)

    Straight up. I’m thinking the answer is “Of course.” On the other hand, chicken broth is lighter, and it’s pretty good.

    I’ve made pinquitos with both broths and both are good. If these beans are to go with your chili, I would lean toward beef.

    But, final decision would take into consideration the best by dates on the broth container. Both broths make good beans.

          A lot of recipes (like those from Cooks Illustrated, America's Test Kitchen) encourage the use of commercial chicken broth over commercial beef broth. Many commercial beef broths have off flavors in them (metallic or bitter); apparently it's difficult to get them right as compared to chicken broth.

          I usually have a supply of homemade beef broth in the freezer, but when I run low or I'm cooking elsewhere the best commercial beef broth I've found so far is Zoup! Beef Bone Broth. They also have plain Beef Broth which is good too.

          Another go-to is Organic Better Than Bouillon Reduced Sodium Roasted Beef Base.​

            Yeah, I saw that; there might have been an ATC show with Jack comparing them. This stock is okay, pretty good. The beans are done now; tasty, but a bit salty. That’s an easy fix, though. I’ll drain them and rinse then, just like they came from a can!

            I’ve been using the Better Than Bouillon ham base in beans. It’s really good. I found it looking for a recipe to duplicate Campbells Bean and Bacon soup.
