I never knew about these until a few years ago. They are dark purple, like eggplant, but when they cook up they turn green.
Because I get them at a farmer’s market, at the edge of the field, they’re usually not more than a few hours old. So I steam them. No sauce, just a little salt and a little butter, all the freshness. And that’s good eatin’.
If you’ve never had these (I didn’t know about them for 60+ years), they taste like string beans. The same, but a little different. They’re good beans!
Yep they are a type of green bean. Not to be confused with purple hull peas. I like to boil them in salt water 2 minutes, then blanch in ice water. Sautéed down some sliced onions and matchstick jalapeños in bacon grease then add the beans and crank the heat to sautee/stir fry them with salt and pepper. At the last minute add some minced garlic and remove from heat. Serve hot.
