My Rancho Gordo problem is different from my cheese problem. I want to try ALL the Rancho Gordo beans, but there are a few that I absolutely love: Good Mother Stallard, Marcella, Scarlet Runner, and Christmas Limas hit the right spot for me. Don’t get me wrong, I love everything bean I've had from RG, but those are the ones that call me back. So I have maybe 5 bags of beans that I have to use before I can order those again, otherwise I’ll never make the ones I have now!

hoovarmin I don’t really make anything dedicated to scarlet runners, or really to any bean. I decide to make a bean thing, like beans and rice, and then decide if I want to use red, or white, or black, scarlet runners, etc. And then, do I want to go European, with a mirepoix, or Cajun, with a trinity, or TexMex/South American/Caribbean, then do I want to use ham, or chicken, or beef, or pork, or none of those, etc..
It’s more fun that way. And it always comes out good.

I just made the newly-delivered Good Mother Stallards last night. My gosh, what a bean. Lovely flavor with a chubby round shape that holds all that creamy bean stuff in so nicely.
I Instant Potted them for 60 min with NPR and they were very toothy, so I had to IP them for another 10 min and bring the pressure down naturally (NPR). They were perfect then. Oh, and I'm at sea level, so I'm assuming that when we return to higher altitude I'll have to cook them even longer.

hoovarmin, they're such a good bean that I just Instant Pot them with aromatics, pre-softened on Saute mode before adding the beans and water. That way I appreciate the bean itself.
The leftovers are sometimes used in other dishes and soups, usually involving a smoked ham hock.
I'm pretty much a bean purist when it comes to enjoying Good Mother Stallards.
