2 cups cooked lima beans - soak the beans and cook prior to baking.
salt and pepper to taste
12 slices bacon cut in half cooked slightly before baking
1 can of tomato soup
1/2 cup of water
Cook beans at a rolling boil for about 15 minutes or until tender. Arrange lima beans in a greased casserole. Season to taste. Pour the tomato soup mixed with water over beans
Bake at 350 for about 40 or 60 min.Place bacon on lima beans the last 20 min of cooking. I cook the bacon slightly on the griddle before placing on the beans.
I use a 9x13 pan so I have room for all of the bacon.

My wife made these with a couple changes to the original recipe as published.
She used a lb of dry baby limas 10 min boil & 4 hour soak(the recipe called for canned). Then cooked til tender.
1/2 cup brown sugar (recipe called for 3/4).
1/2 cup ketchup
1/2 onion chopped
S&P
1 tsp worcestershire sauce
3 strips bacon diced
She added apple cider vinegar to taste.
Came out pretty darn good. If anything, I'd have used less cider vinegar and added a splash of BBQ sauce to make richer and thicker.
That being said, I'm thinking of just using pintos for our upcoming barbecue w/ brisket.
My wife is suggesting black beans since we have a stock of Rancho Gourdo black beans. She might be on to something. Rich, earthy & creamy black beans w/ some onion and spices might be a good complement to smoked beef. Thoughts?
I was trying to figure out for the first few posts what this was about... I was thinking limas was like... "LEE-mahs" - some kind of Hispanic/Latin thing.
Then I saw you talking about lima beans.
No thanks. I didn't realize people actually ate those anymore.
