The beans were even better the next day. I did add some bacon, along w/ the rendered fat, and a couple more shakes of chipotle powder. I'll def make again. I forgot how much I love pintos and the creamy broth they make. Looking forward to having some for dinner tonight!
Yellowtail ceviche. I used jalapeños, red onion, green onion, cilantro, mango and of course, lime.
Served along side fresh roasted tomatoes and chilis molcejete salsa, charred pineapple guacamole, tortilla chips, esquires, frijoles a la Olla, Smoked brisket chili, and grilled smoked chicken thighs. No one went home hungry.
