    Alabama white sauce with yogurt

    My wife is not a big fan of mayo but we really want to try the alabama white sauce on our next chicken or on wings. Has anyone tried to substitue plain grek yogurt for the mayo? If so, how did it turn out?

    I've used greek yogurt with some sour cream to make a similar sauce. If you don't want to mix in some sour cream a bit of a neutral flavored oil would help give the sauce a better mouth feel than just straight greek yogurt.

      Histrix hit the head on the nail. I've substituted thick greek yogurt too, I really like it. There are two minor differences:
      1. It is just a bit less 'sour', or acidic, compared to the mayo. That can either be a good thing or a bad thing, depending on what you prefer.
      2. Obviously, it is less fatty, which is a good thing. Histrix' suggestion on adding just a bit of oil is really smart.

      I don't find the slightly less acid yogurt is a big thing. If it is, just add a few drops of vinegar. But then we're getting very close to the mayo again...

        Both my wife and are were repulsed by the idea of white sauce. I made it anyway. Boy was I glad I did. It is really really good. I suggest you try it as is first.

          I'm not a big mayo fan, but I love Alabama white sauce. I suggest you make a small batch of the original & the yogurt based & see which you prefer.

            I haven't tried it yet, but my guess is that, as in most of MH's recipes, the mayo is just one ingredient and probably won't stand out.
